Most People think a roast is a very difficult meal to achieve, especially for a starter cook, but I don't think so. I did pretty good on my fist one (pictured above) and if I can do it, You can do it.
Ingredients
1 x Beef Roast (Blade)
1 x Jar of Cranberry Jam/Sauce
1 x Small bottle of 100% lime Juice
1 x Bag of Baby Potatoes
1 x Pannet of cherry Tomatoes
1 x Pannet of Mushrooms (Button)
1 x Red,Yellow and Green Capsicum/Peppers (Chopped)
8 x Garlic Cloves
Cranberry & Lime Roast Beef
Marinade (needs to be left over night)
Place roast beef in Large seal-able Container.
Pierce with a fork all around,
Pour lime Juice over the roast.
Use basting Brush to generously cover roast with Cranberry Sauce/Ja
m.
Put any desired spices to taste. (steak, black pepper, All purpose)
Add a little olive. (3 - 4 Lids depending on roast size.)
Cut slits into the Roast and push in the chopped Garlic. (3- 4 Slits depending on r
oast size)
Seal Container then place in fridge overnight.
Method
Prepare a large baking dish, I would advise not to put foil just spray oil because foil will stick to the roast.
Place roast in prepared pyrex baking dish and cover with foil.
Roast for about 2 and a 1/2 hours at 200 degrees celsius. (this is for a well done roast, remove 30min for medium well and another for medium etc....
Remember: Keep adding more cranberry and Lime every 30 Minutes.
If roast is not browning as desired, remove aluminium foil and switch to grilled until desired charring.
Vegetable Bake
Method (Cook 30min before roast is done)
Combine chopped vegetables (Mushroom, Capsicum and cherry Tomatoes)
Place in greased pyrex baking tray.
Season With Nandos Lemon and herb Seasoning and salt to taste.
Cover with foil and Place beside roast in oven for 20 - 30 min.
Herbed Butter Baby Potatoes
Method
Wash potatoes under running water, place in a medium non-stick pot,add water to cover potatoes and bring to boil.
After 20 - 30 min poke one with fork to see if soft. There after boil until desired texture.
Drain all water and add 2 table spoons of butter, sprinkle mixed Italian herbs and sautee.
Gravy
Method
Place Beef Gravy base in sauce pot, add boiling water and stir.
Add crushed Garlic and 5 tablespoons of red wine.
Bring to boil continuosly stirring for 5 - 7 minutes.
Pour into warmed gravy bowl/Jug and serve.
