
This is my first recipe I am publishing...
This meal is a lovely saturday night or even birthday treat.
Ingredients
4 x Sweet Potato
1 x large red Onion
1/2 bunch Spring onions
3 x Spanish Chorizo Sausage
5 x Garlic cloves
1 pack of Cherry Tomatoes
Sweet Potato Mash
Method
Put the sweet Potato to boil on medium heat.I like to boil it without peeling it then peel it just before I mash it.Boil for about 40 min or until soft - almost to the point of overboiling.Remove from stove and peel of skin with a table knife. ( it will come off really easily)chop up into small cubes and place in a bowl.Use Masher to mash potato until smooth. Add Tumeric to acieve bright yellow colour if desired.Add some fresh cream and butter to make it creamier, 1 table spoon at a time until desired creaminess is achieved.
Garlic stuffed Cherry Tomato
Method
Wash cherry tomatoes under cold running tap. Place on chopping board and cut a little whole into each tomato.
Get the garlic and chop into fine pieces.
Stuff garlic pieces into hole in the tomato.Place all stuffed tomatoes in a sealable container and add 20ml Olive oil and Vinegar, black pepper and all purpose seasoning.Seal container and place in fridge for 30 min.Remove from fridge and place in a casserole dish. Cover dish with foil and grill at 200 degrees celsius for 15 - 30 min depending on size of cherry tomatoes.
Grilled chorizo
Method
Place sausage on chopping board and cut at an angle.place in a pan with 1 table spoon of olive oil and fry for 20 min at high heat.
Caralmelised Red Onion & Spring Onion
Method
Chop onion into rings. Place redonion in pan and fry at low heat for 20 min.Add spring onion and fry for another 10 min, add reduced salt all purpose seasoning.
Enjoy - remember to add salt to taste to all the components :-)
